Marshall's White Chicken Chile Recipe

Serves 8 to 12 people

Ingredients

1 lb. Lima beans
1 lb. Pinto beans
1 lb. Great Northern beans
1 diced Onion
The above ingredients will be boiled.

8 - 12 Chicken Breasts (boned or boneless)
1 - 4 Chopped Jalapeņos (fresh or canned)
1 - 4 Poblano Chiles
Pinch of Red Peppers
Sprinkle of Turmeric (for color)
You should add the above ingredients to taste and based on your preference.

White Rue Sauce
Butter
Flour
Milk
You should make enough rue sauce to cover all the ingredients once in the baking dish.  How much rue sauce depends upon the ingredients added.  The goal is to make thickened milk - you can make it thick or thin depending on your preference.

Directions

In a large pot, put lima beans, pinto beans, great northern beans, and diced onion.  Cover with water.  Boil until beans are tender.  Drain beans.

While beans are boiling, grill chicken breasts.  Cut chicken breasts into cube size pieces.

Create rue sauce by heating butter and adding flour to make a paste.  Add milk gradually and stir until mixed.  Make more rue sauce if necessary.

Place all ingredients into a baking pan and place in 350 degree pre-heated oven for 40 minutes.

Salt and pepper to taste.
